I was born in Santarém, modesty aside, the most beautiful city in the State of Pará. I grew up in love with the Tapajós River, so I am - literally - a river boy. I am the son of a dressmaker and an electrician, and I’m greatly proud of it. I have three brothers, I am the father of Luísa and Paulinho and husband of Analice. I'm Marc Saulo Jennings Simões. I learned to have a demanding taste from my father, an electrician/excellent cook. Today, knowing cooking techniques well, I am not afraid to say that my father was the best cook I have ever known. He cooked for pleasure, and the moment that made him most happy was seeing his friends delight in his original dishes. In 2009, I decided to make my home a restaurant, which I called “Casa do Saulo”. In addition to cooking with love, valuing what my region produces and dedicating myself to doing everything with technique and zeal, I studied at the Laurent Suaudeau School in São Paulo to specialize.Today, I dedicate myself to the Casa do Saulo Restaurant, giving my clients the experience of enjoying Tapajós cuisine, with a paradisiacal view of the river and very personal approach in service. I make sure that everyone feels like home and well received. I receive friendly chefs who immerse themselves in Amazonian cuisine and share with us knowledge and techniques. I created the Cozinha Tapajós (Tapajós Cuisine) platform - the appreciation of everything that is ours through gastronomy, product research and assistance to the producing or managing communities of the Amazon. I’m the winner of the “Prazeres da Mesa” Award 2018 and Casa do Saulo was the best restaurant in the North of the Country in 2018, also nominated this year. I represented Belém as the Creative City for the UN in 2017. I signed menus at renowned restaurants in São Paulo such as Tordesilhas (Mara Sales) and Maní (Helena Rizzo). I sign the menu for one of the biggest New Year's Eve parties in the country, “Vai Tapajós” by Soul Kitchen. I participated in the national events like “Fartura”, “Brasa na Mesa”, “Fuegos”, “Mesa ao Vivo” and I invest in the passion that I saw in the kitchen of my parents' house. I'm a chef in the Tapajós kitchen.
